Creamy Strawberry Parfait
Slice about 5 strawberries (more if you prefer)
In a small bowl, mix 2 tbs of plain greek yogurt, 2 tbs light cool whip and about a tsp of honey. Mix well until all are incorporated together. Arrange strawberries onto a plate or in a separate bowl. Top with the yogurt mixture and drizzle about 1 tsp of chocolate syrup on top.
Fast Flourless Chocolate Cake (ok, maybe not healthy, but gluten free and good!)
1lb bittersweet chocolate chips
1 cup unsalted butter
1/4 cup chocolate, hazelnut or coffee liqueur (Kahlua works well!)
1 1/2tsp vanilla extract
7 eggs (room temp.)
1 cup granulated sugar
Preheat oven to 350 degrees. Line a 9 inch springform pan with parchment paper and butter the paper. In a large saucepan, simmer bittersweet chocolate, butter and liqueur. When mixture is melted and mooth add the vanilla extract. Set aside to cool. In a bowl, beat the eggs with sugar on medium for 5 minutes or until fluffy. Gradually add eggs to chocolate mixture. Mix well. Spoon batter into pan. Bake for 1 hour or until toothpick inserted in the center comes out with a few crumbs. Cool for 1 hour in the pan, then remove from pan. Sprinkle with confectioner's sugar. Store in refrigerator.
